Lemon Pan Sauce
serves 4
Ingredients
3 T butter, 1/2-inch cubes
1 t flour
1 T lemon zest
2 T lemon juice
1/3 C dry white wine
2/3 C chicken broth
Instructions
Mash the butter cubes with the flour, then melt in a skillet.
Whisk in the wine and reduce to 1/2. Whisk in the broth, lemon juice and zest. Season to taste.
