Ingredients

• 3 T butter, 1/2-inch cubes
• 1 t flour
• 1 T lemon zest
• 2 T lemon juice
• 1/3 C dry white wine
• 2/3 C chicken broth

Instructions

1. Mash the butter cubes with the flour, then melt in a skillet.
2. Whisk in the wine and reduce to 1/2. Whisk in the broth, lemon juice and zest. Season to taste.
